I just discovered Doug Belshaw's list of indispensable freeware programs. My favorite is the portable aps suite. It'll install Firefox, NvU, OpenOffice.org, Abiword, Sunbird, FileZilla, and GAIM to a flash drive.
(Windows only.)
I added the freestanding Audacity.
